Noob question...I ride normal 10 spd ultegra, but was interested in buying a wheel that's 11 speed compatible. If I buy the wheel, can I just switch out the hubs and it'll work? Or is there more to it than that?

If it's a new wheel, it'll probably come with a spacer to make it 10 speed compatible.

It says that old 10 speed aren't compatible with new 11 speed, but are they backwards compatible from a 11 speed to 10 speed with just a spacer? Sorry if I'm being redundant, but just don't want to drop the cash on a disc that I can't even use...

Exactly what wheel, year and model, are you buying?

It has an 11 speed freehub body, and it should come with a black spacer that will allow you to run 10 speed cassettes.

11 speed wheels can use 10 speed cassettes with a spacer. 10 speed wheels can't run 11 speed cassettes unless they're Mavic hubs or you modify the cassette or freehub body in some way.
