Approx how much speed can I expect to gain over a 56mi half iron race ride by switching from original road bike wheels to zipp 60s? (Assuming all other conditions remain constant)

I'm not sure, but if you're willing to buy Zipp 60s there are other wheels you should be looking at that provide better aero performance for less or similar cost. The Zipp 60 is a recycled design (old narrow 404) while other manufacturers provide modern (wide/u-shaped) designs at that same price point.

Using the old role artisinale chart,
assuming zipp 60 = 2007 zipp 404
Your stock wheels assumed to be about the same as fulcrum 7 or kyseriums

You would save about 10 watts per wheel at 50km/hr
That is roughly 1second per km per wheel

That should mean 3 min over 90km.
Give or take some wind, hills and your time actually spent on the course.

FYI, time savings from an Aero helmet are similar but cheaper.

Have a good day.

Flo and Williams come to mind. I think both are more aero and cheaper than Zipp 60.

flo, hed jet (express or non, depending on budget), bontrager aura5, swiss side Hadron all have aluminum brake tracks. There are even more options if you're ok with carbon brake tracks.
