Vegans, what do you eat?

Couldn't find anything in prior posts.
What do you guys eat for breakfast/lunch/dinner? etc...
I'm not talking about cooking, nor am I looking for recipes, just basic info? I tend not to vary my
food much and HATE shakes of any sort. Also, very little pre-packaged crap.
So that leaves you w tofu/soy milk/rice/pasta and obviously fruits/veggies.

what would a typical day look like?

but yea i eat a lot of everything lots of rice, fruit, beans, curries n stuff, potatoes, etc. just not meat, milk, eggs, and their derivatives lmao

Oh hey a post for me!


Today I had

Breaky:
-Overnight oats with flax and blueberries
-2 Bananas
-Apple

Snack:
Almonds and Pumpkin seeds

Lunch:
-Leftover stirfry consisting of tofu, peppers, broccoli, zucchini, kale, onions, fried in olive and sesame oil with a bit of soy sauce, served over brown rice
-2 dates with the pit replaced with a piece of dark chocolate (highly recommended)
-Pear and peach

After work snack:
-Hummus and pita

Dinner:
-some chili made with chickpea, black bean, kidney bean, bok choy, carrots, hot peppers, a small amount of TVP and ungodly amounts of chili powder

Desert:
-Some of that uuuunreal So Delicious creamy cashew ice cream

Bedtime:
-Almond butter on toast

Next day I will eat the leftovers of dinner for lunch.

Why? - pizza is soooooooo good.

Vegetarian was easy for 16 years - (I like fish and sometimes fried chicken)

I do not eat dairy other than the classic pizza. Oh Pizza how I love thee.

as long as it doesn't contain milk chocolate is definitely vegan.

Usually 70%+ chocolate is vegan but you just have to read the package.

This is me too. Aside from pizza, typical foods:

Breakfast:Green smoothies, granola bars, overnight oats, cereals w/ hemp milk, bananas

Lunch:PB&J all day, apple, almonds and dried cherries

Dinner:Stir fry, soups, lentils, rice, tostadas/mexican food, veggie sandwiches

Its actually been pretty easy (work functions are tougher)

I'm not actually a vegan.. but I'm a vegetarian and can probably give some similar answers.

Breakfast for me is usually oatmeal, not the prepackaged kind, I like getting a tub of quick oats so I can make as much or as little and then I like to add my own things in (granola, fruit, etc.)

Lunch and dinner are usually whatever I can find that is quick.

Last night I had zucchini and corn tacos, you can also add beans to this for some more protein.

I eat a lot of chick peas and a lot of pasta salads just filled with different vegetables.

I do enjoy tofu I just haven't started experimenting with cooking it myself yet.

Also every once in awhile I will get some tofurkey or other type of fake meat, you just still have to check the ingredients.

Beef is vegan right? Eating all of those plants is causing global warming. All these vegans/veg people eating so many leafy greens that absorb CO2 and then they have some serious farts and we all know methane is worse than CO2...

Lunch: Rice with something moist, like a tomato+lentil stew and hummus.
Snack: Nuts and fruits
Dinner: Roasted roots and veggies with blanced kale and maybe alcohol free beer (dat vit-B!)
Post-workout: green smoothie with amino acid supplement

Usually eat 0.5-1kg of fruit per day and try to eat as much vegetables as possible. Fiber is no issue.

I've read somewhere (I forget where) that the number of american males 18-34 who consume sufficient fiber is statistically zero. Low fiber is very well correlated with colon cancers (as meat and other zero fiber foods take forever to rot in your gut). Fiber doesn't make you poop more it makes your poops healthier and cleaner. It is ironic that so many question vegans "where do you get your protein" when the valid question should be for meat-eaters "where do you get your fiber?"

very similar to what I eat. save for smoothies, hate them.
do you think it's enough food? I am a little underweight, although stable and haven't lost weight in a very very long time...

I wouldn't classify myself as vegan per se, but I do eat a largely plant based diet which would probably meet the standard of being vegan about 5 days of the week (I like salmon too much to give it up permanently) and for a fun experiment I'll go completely vegan for 3-4 month periods. Here is an example of a typical day

Breakfast:
Oatmeal+Grapenuts with frozen blueberries mixed in (sometimes add Maca or ground flax seed)

AM Snack:
Apple+Nuts mix (almonds, walnuts, cashews)

Lunch:
Spinach salad with quinoa, black beans, cucumbers, red peppers, tomatoes

Afternoon Snack:
Carrots and Hummus and/or a Larabar

Dinner:
Roman Rice and Beans w/ some nutritional yeast sprinkled on top

PM Snack:
Shredded wheat w/ non-dairy milk

I eat Tofu from time to time, but I try to keep it to a max of 2-4 meals a month as I'm a bit wary of soy protein. I'll track my diet from time to time and I rarely have an issue of getting enough protein. If I am short for the day (I try and hit 100g) then I'll use a scoop of Vega Protein or another plant based powder.

breakfast: I almost always have oatmeal with peanut butter (today's PB of choice was Peanut Butter & Co Dark Chocolate Dreams). On the rare occasion I don't do oatmeal, I eat maltomeal, cereal with soymilk, or a bagel with PB&J (usually when traveling). A breakfast treat would be pancakes or waffles (easy to make vegan) or hashbrown potatoes with salsa.

snack: lara bar, Clif Builder bar, pretzels, banana and PB, granola, nuts, raisins, carrots, etc

lunch: at least 5 days per week I bring brown rice, black beans, and salsa to work. Sometimes I'll toss in BBQ sauce, different kinds of veggies (broc, peas, etc)

snack 2: same as snack 1

ride food: gels, bars, poptarts (unfrosted), TriFuel

Dinner: cubed sweet potatoes mixed with blackbeans, salsa, broc, and peas; baked potatoes, pasta, pizza w/o cheese (or sometimes with Daiya), sometimes Gardein "meat", garbanzo beans, etc

Junk: Oreos, Brownies, Choc Chip Cookies, Chips...I said I was vegan, not healthy
