In Tampa, Flatwoods is a very popular place. There are a couple long trails (Suncoast?) that run north of town too.
I can't speak to Tampa but in the Florida Keys there is basically only one road, us-1. There is a multiuse path that runs from Miami to Key West although I've never ridden it. Good luck - have fun.
