Is there a way to show the power readings from the powercal on the 520 while you are riding?

The powercal should show up in the sensor pool like any other ANT+ powermetter. Then just select the power metric data screen you want to see displayed.
Set the power display for 30 sec power average. Looks like that's the longest available on the 520:

A 30 second average will probably still be jumping around and not terribly useful.
I generally use the PowerCal for tracking total workout effort and it works nicely for that when I don't have a real powermeter.
If you want to use it for interval pacing, it works fairly well for longer intervals (1-2min+). The longer the better. Use the lap power display on the 520 to pace those.
