Hills. You need lots of hills. Short sharp ones for start then basically if you can climb 2000m in about 65-70 miles you have cracked it
Depending on how serious you are a weekend down here in advance to ride bike course might be worth considering
Also. Think about where you want to stay. If you want to stay for a week and you are with family i would rent an apartment. Hotels, i would try to find accom close to the mercure.
If you want an apartment i have a friend who has some and can put you in contact. They are very close to start / finish

I have a two week trip to Gran Canaria in November and eight days in Tenerife in December with my son. So long climbs should not be a problem after cycling Pico de las Nieves and El Teide a few times.
