How many miles do I want to ride on my new tire before the tire is optimized for speed? Say for instance, a Vittoria CX?

It will obviously depend on the tire model, and there is also going to be some variance for any one individual tire, but it seems that 50ish miles is plenty. Some tires need less. And some see only minimal drop in Crr. But, If you put 50miles or so on a tire, you should be fine.
Also of note is that some tires slow down - aerodynamically - with increased mileage. Josh P said that Conti GP4000 tires drop off pretty significantly after about 500 miles or so due to squaring off of the tread.
