Night before, Pasta with Meat sauce and bread.
Morning before, Oatmeal and a glass of juice. Then pop a gel 30-40 minutes before racing
Tried and true for me, never cramped during a tri.

A few beers and usually fish or Mexican. Then about a pound of whatever cereal I have right before I go to sleep.

I'll make a lasagna that's a little light on cheese, and add a lot of shredded veggies to the sauce (eggplant, zucchini, carrots, peppers). Then morning of will be a bagel with some PB and naked brand Green Machine juice.

steamer bag of white rice, can of tuna, salsa, glass of wine. Done...easy and accessible everywhere. Its not fancy but it gets the carbs done and clears the system easily so no crazy runs to the bathroom.

Many of us already have a lot of fat on our stomachs. We also don't mind putting fat in our stomach either. Especially on race day when PB&J is so tasty and encourages eating.
Take a short break from ST and read my blog:

To be honest...never really thought/think about the fat part of it. Good carbs and protein and my stomach tolerates it well race morning. Maybe some good comes of the fat...who knows?

Main dish: Whole wheat pasta with fish or gilled chicken.
Sides: Bread and veggies
Morning of: Oatmeal with creamy peanut butter mixed in, along with bananas and blue berries. Sip on water and Cytomax till race time.
Gel 20-30 minutes before race start.
Keep it simple, eat what you normally would the night before a big workout.
