Brake cable question
So when rerouting my rear brake cable, two wires untwined from the main cable near the pinch bolt making it impossible to get it through the barrel adjuster. I couldn't twist it back, so I decided to completely unravel the wire to the very end of the cable at the levers and cut it off from the terminal button. Now it looks like I have a spiral design of missing wire running up the cable. It seems that I still have proper tension and leverage when pulling the brakes.

Is it safe to still be riding with this cable? Or am I better off with a new cable?

Yes and yes. It's still safe to ride, but it'll probably have more friction and cables are cheap; so replace it when you get a chance.
