I dried mine thoroughly with paper towels, then rubbed kosher salt all over it, and some fresh ground black pepper on the top. Let it sit out and come to room temp for a couple hours; now it’s in a 170 oven for 5 hours. At the end, I’m going to jack up the heat to 550 and do a reverse sear for 10 minutes. The low and slow method is in my cook book “The Food Lab” which has some really great recipes (the chicken Parmesan is awesome).

That describes the rib roast that is sitting in my 180 degree oven right now. It's only about 4 pounds, so it won't take 5 hours. Online Serious Eats/Food Lab description here.

Making a 1 bond Prime Rib for breakfast,

I mixed together ground Rosemary, Himilian Salt, freshly ground, and fresh ground black pepper and some of this

The Donkey Pit Seasoned Salt




1 Cup Himalayan Pink Salt
2 TLB spoons Black Pepper
1 TLB spoon White Pepper
1 TLB spoon Cayenne Pepper
1 TLB Spoon Turmeric
1 TLB Spoon Fresh Ground Pepper, fine
4 TLB Granulated or Powdered Garlic
4 TLB Onion power or Granulated
1 TLB Chili Powder
1 TLB Fins Sweet Basil

Coated it with olive oil and added the rub, heated up the cast iron added some olive oil and butter and seared it on both sides for about 5 minutes. Raised it off the pan with a small wire rack, stuck it on the smoker at 275 until the internal temp got to 100 then turned it down to 212, waiting for it to get to 120. I'll pull it off and cover it for about 20 minutes.

I'll pick up some port tonight to make a port wine reduction for the leftovers.

Yeah, mine (9 lb) ended up taking about 4.5 hours to get to a tad over 120 in the center at 170. Currently resting in a warm oven until it’s time for the reverse sear.

No, but if i can get random foodstuffs from Europe pretty sure i can get some Canadian season salt.... worst case just drive to Windsor

FWIW, I think the Hy's is a better choice of the 2. The pro's OTOH probably have a different opinion.
