I know that typically when you pair a smart trainer w/ zwift, you're letting zwift control the resistance based on terrain and what not, but I was wondering if you can still ride zwift while in erg mode doing a set workout? It may seem stupid, but I get so bored on my trainer and want to ride around in zwift while still using the erg mode to control my power based on a pre written workout.

Absolutely. You can pick the workout and the course in the first screen. When in erg mode, you'll just ride the course at whatever speed corresponds to the power you're riding at the time.
