I have a pair of Shimano RS-80 10-speed wheels on my 2012 Cervelo RS with SRAM Rival 10-speed and I want to put a 5800 105 groupset on it this winter. However, I don't want to buy a new wheelset if at all possible. Can I just upgrade the freehub body to an 11-speed Shimano freehub or do I need to get a whole new rear hub and have the wheel built up on that?

You should be able to upgrade the freehub body as long as you buy the correct type. I'd suggest removing the current body just to make sure you buy the correct type.
I believe you will need to get the wheel re-dished. Not super complicated.

11 speed freehub is not available for the rs80's. you have either to lathe the freehub body or the cassette
