I just realized that my two cartridges of Caffelatex Espresso have a best used before date of 2/2016. I guess I should just chuck them and get new ones, but wonder if anyone has experience going beyond the recommended use date.

I've used my expired ones as presealant prior to a race, why waste it.
There is a reason there is a used by date.
The stuff mixed together to create these sealants just don't like each other so they are only an emulsion.
They settle out if left standing and react in not nice ways if together for a long time.
There is a reason why tyre sealants are not sold in bulk, you end up throwing most away.
Road tyres struggle enough with high pressures to use sealant effectively, compromising the sealant pretty much means you are filling your tyre with extra weight that makes a mess instead of fixing a little leak.
Out of date, bin it.
