If you use Strava, check out the heat map from SLC to see where the riding is good. Emigration canyon used to be good, but I haven't trained there in over a decade so can't be trusted to give any specific advice.

As a follow up to the last poster, I tried cycling Emigration Canyon last year and wasn't comfortable with the traffic. Sorry I can't be any more help than that as I'm not a local :/

...but, if you want to swim, the Steiner Aquatic Center is hard to beat: long course pool with a view of the Wasatch Mountains =)

Any of the canyons if you want to climb. Emigration is the easiest and shortest of the major canyons. If you want to avoid traffic, look at City Creek as it is closed to cars, but the speed limit is 15 and they enforce it on occasion. Big Cottonwood is my favorite with 3500'+ of climbing over 16 miles I think it is pretty easy comparative and beautiful! LCC is the hardest. For a rolling ride check out mountain view corridor or Wasatch boulevard. You'll get a bit of vert on Wasatch, but it is a beautiful ride and you'll go by most of the major canyons. Also check out Millcreek canyon!

Emigration - https://www.strava.com/segments/2351360

Here is up BCC and over into PC then back into SLC - https://connect.garmin.com/.../activity/1238287839

Breakfast check out Roots Café. Best spot I have found.

If you have other questions or want more info, let me know! Enjoy your stay

I went up for the Tour of Utah Ultimate Challenge last year (which kicked my ass, way harder than ironman. well that and allergies I only figured out after the fact). Here's the rides we did while up there. I highly recommend the last one, it was awesome.

Unrelated to cycling, go to the Sunnydale Farmers Market. There is a farmers market downtown (and you could hit both), but Sunnyvale is run by refugee farmers.
