So for many years I have done multiple racks of baby back smoked ribs add party of a memorial day party for friends. However, living down the end of the foods road, I can get way better pricing on short ribs.
So my thinking is this, trim them st Louis style, smoke the trimmings for an hour or so and freeze them for baked beans, split pea soup or bean soup.
What say you? I don't normally work with this cut.

I will try that later. I would misd my rub and sauce, but I have copied that for a laterr cook. Sounds great.
