11speed group with 10speed cassette
Just got my Cycleops Hammer. I currently have a 10sp cassette on it for my road bike. But my tri bike is 11sp.

What would happen if I put the tri bike on there with a 10sp cassette?

Some gears might skip, but nothing else. I never bothered to update my trainer wheels to 11sp and it hasn't made a difference. As long as I don't shift off the end of the cassette, it doesn't even skip.

Yep, total protonic reversal.

I ran 11 Sp SRAM 22 on crank set and front and 10 sp SRAM for rear and cassette all last year and never had an issue. Front isn't indexed so not as big of a deal. Anything I've read kept me from attempting to run 11sp rear with 10 speed cassette because of chain width and cog spacing differences.

If you can use a 11 speed cassette, just buy one. The skipping of gears will take a toll on your chain, so in the long run, you end up with a better running drive train that will last longer. If a 11 speed cassette doesn't fit your trainer, Edco MonoBloc cassettes are made to fit 11 speed onto a 10 speed spacing.

The Edco monoblock is an elegant solution.... but pricey! $250 seems a bit much... https://www.edco-cycling.com/...tte-shimano-11-speed
