I really want the p5-6 but I don't like the lack of options and adjustability of there front end, is it possible to put a after market stem/bars on the P5 while managing to keep the front brake cover on. I'm assuming it might take some personal customization.

Grill's link pretty much covered it already, but the P5 fork uses a standard steerer tube so any standard fork or integrated handlebar can be mounted.
I bought a used P5-6 that came without a handlebar, so I set it up with 3T Ventus II bar. I made myself a "beard" by cutting up an old plastic shampoo bottle that was the right shape, then spray painted matt black. It mounts to the underside of the base bar with magnets. It takes a very close look to see that the beard not original, and cost me nothing other than a bit of time and effort!
