Having lived in Texas for the last 20 years, brisket is way overrated. It is real easy to get crappy brisket and all "lean" cuts are crappy to me. Have to have that fat in there to keep it moist. At least order the moist cut or burnt-ends.

Pork ribs are a solid choice for Texas BBQ. True that brisket is the standard, but a good smoked pork rib (or any pork for that matter) beats a good smoked brisket.

If you'll notice, here in Texas most folks will order the brisket, but then drown it in BBQ sauce and even wrap it in white bread with onions and pickles. There's a reason for that.

Pork ribs are eaten just as the come.

I'm a Memphis and Carolina BBQ guy myself, but ordering pork ribs when in town for only a couple of days is like going to a Mexican restraunt in Paris. I mean when people visit I never take them to get things crust, only deep dish
