Gold camp is paved for the first 4 miles or so. A lot of locals just use the paved part for intervals. The dirt part is very rideable on a road bike, I've done it and I've got crappy bike handling skills. And then you get to come down Cheyenne Canon which is a blast (and you probably don't want to take your gf up Cheyenne canon since its a definite "climb" with a few parts over 10% grade.

Something like this. I wouldn't ride from Ted's bicycles. There are no good streets or routes from that area. You're much better off throwing the bikes in a car and driving somewhere. In the route below I assume you drive into Manitou Springs and park just off of El Paso in Memorial park.
For GoldCamp rd you will have to ride the 4mi up to the dirt and then turn around and descend a little. It's worth it, the view is pretty awesome.
This route will probably have 2500ft of total climbing.
This route also is either on bike lanes, paved bike path, or side roads with little to no traffic. Very safe route with all speed limits 35 or under.

AF Academy is a great ride, but unless have a military ID they are only allowing cyclists to enter at the North Entrance and then only go to the visitor center and back. It's a shame.
