Inspired by YaHey's spring cleaning project :).

It's a beautiful day here, and it feels like we are finally creeping out of our typically nasty early spring weather. I am so ready for sitting around a patio, grilling with some friends and enjoying a few cold ones. I would cook everything on a barbeque if I could. So share your favorite recipes, sauces, etc here and help me with dinner tonight!!! I love to cook but admittedly my grilling repertoire is quite limited. Grilled, smoked, and cold smoked recipes all accepted and appreciated!

Salad: Not really grilled, but seems to do well at barbeque functions. Shrimp, diced papaya, diced green/red/yellow peppers marinated in lime and a medium curry powder. Bonus points for serving in halved and hollowed papaya.

Appetizer: I'm a big fan of skewered shrimp marinated in tequilla, cilantro, jalapeno and S&P with home made chipotle mayo.

Main: For me it's all about grilled lamb. Good lamb + salt + olive oil + rosemary = Bliss.

Favorite BBQ Sauce: I could really use some help in this department.

Dessert: Peaches, cut in half and pitted, seared then stuffed with toasted walnuts which are tossed in an amaretto and brown sugar syrup in a pan. Topped with ice cream/fresh gelato of choice.

My recipe goes like this:

1. Get in car
2. Drive to Oklahoma Joe's at 47th and Mission (Kansas City)
3. Order
4. Enjoy

Any deviation to this is a disgrace to BBQ

I used to work at an amazing "Southern" BBQ restaurant in the Vancouver area. Most people here will probably be like what, Canadians can't do Southern BBQ. The problem with it though was most people north of the border don't understand, or appreciate proper BBQ. Everytime there were customers from the States we had rave reviews about how great the ribs, pulled pork, brisket were etc. We even competed in the NBBQA and won numerous 1st place awards, especially with the sauce/spices/rubs. Unfortunately we had to shut down. I made sure to grab lots of the Sauce and Spice at the end, and that is what I continue to use. I don't know what I'm gonna do when I run out!!

What was it called and what area of town? That is a shame you had to close down. The only place I know of like that in Vancouver is the Memphis Blues House, which I do love. Going on an epic road trip through the barbeque states is definitely on my bucket list :).

You seem to have an incredible lineup dialed in. Very nice!

Around here (Cen Cal) it all about the tri-tip. It's a relatively tough chunk of bottom sirloin that is typically seasoned Santa Maria style and grilled slowly. You cut it thin and cross grain. Everyone has their own spice rub for it. Serve it with Santa Maria beans and maybe some slaw. I'm a big fan of the common slaw. You can vary the ingredients and the dressing 100 different ways. I like to take a basic dressing and add some smoked paprika and some tapatillo sauce or maybe some white pepper for some bite.

I'm definitely a fan of the sausages. They are great for dinner or as appetizers during the cooking process. Love all the chicken based varieties from Costco or ethnic types like chorrizo or linguica. Nothing like pulling a grilled sausages off and cutting it up for those congregating around the grill.

In my book, smoking is all about the wood. My go to mix is oak lump for the main fuel with some maple sticks and a very small amount of hickory (one or two chunks for a 6 hour burn).

rub with whatever dry rub you like (or don't) and finish with this sauce:

4 oz. White Rum
8 oz. Yoshidas Gourmet sauce
1 oz. Worcestershire sauce
2 tbsp. Sri Racha
3 tbsp. Sweet Balsamic vinegar
1 Cup Tomato Ketchup
4 tbsp. Ginger Oil


Another absolute favorite of mine are atomic buffalo turds

In a bowl, mix diced little smokey sausages with shredded cheddar and jack cheese (some add cream cheese but I hate the stuff).

Take some whole Jalapenos, slice off the top, hollow it out and stuff with the sausage/cheese mixture.

Wrap each pepper in a strip of bacon and skewer across the top with a tooth pick or string several together on a long wood skewer.

Smoke for about an hour or until the bacon is crispy. I usually add these during the last hour of smoking the meat so there is something to munch on while the meat is resting out of the smoker.

You can also rub these in your favorite dry rub before smoking to add some different flavors, or if you are brave, use habanero's instead of jalapeno's and mix some membrane into the filling.

oh... and remember to wear gloves while you make them. That's a mistake you make once

Those stuffed peppers sound awesome. I will definitely file that one away! Thanks!!!
I haven't experimented much with smoking mainly due to time constraints but look forward to trying some more this summer.

There is a lot more to it than that such as sauces, marinades, side dishes that complement the meat.

nah, It's all about the smoke. Sauces, marinades and rubs are the lingerie. If the meat is smoked right, it should be able to stand by itself.


You don't really need an expensive smoker either. As long as you can maintain steady temperature and have good control of the airflow over the coals, you can make good food. It gets expensive when you increase the size of the smoker, as it becomes much harder to maintain even temperature and smoke flow. I've had fantastic food off of a converted weber grill.

1. Kill cow and cut nice piece of flesh. Let it age a few days.
2. Heat BBQ to the hottest temperature
3. Throw meat on for a few minutes. Turn.
4. Eat.

Putting sauces and other crap on a good steak is wrong.

That is grilling, not BBQ.

Well that's pretty boring.

Back to the OP.

I guess I like the challenge of the cheap meat. Get yourself some flank steak. Marinate for 8-12 hours. I like a bright flavored citrus based marinade with a lot of acid to break the meat down. Grill for about 3 minutes each side over hot flame. Slice thin, cross grain. Place on you favorite tortilla with some cabbage, cilantro and salsa. Sprinkle a little cotija cheese. Outstanding tacos!

That sounds great!!

Only in the lavender room could people get into an argument about a topic as joyful as barbequing. =)
I think the best steak I ever had was just a great cut of meat from a properly raised animal given as a gift from a butcher friend, which was then properly cooked and completely uncontaminated by marinades or sauces of any kind. Meat to grill to stomach. That being said, there's more to a good barbeque then steak and limiting your cooking to plain meat is just boring as hell. You also don't need "the best smoker you can afford", indeed I've had great food come from home made smokers that cost under $50 to make. There are few things as delicious as fresh back yard smoked salmon!

No I agree on the good steak. If it's a quality cut it is just salt, pepper and grill.

I'm a simple man.

Favourite BBQ recipe is to butterfly a leg of lamb, marinate it overnight with plenty of garlic rosemary, olive oil, lemon juice and whatever else I have that is fresh and would work well. Stick a couple of skewers through it to keep it all together and then BBQ it for 5 minutes each side on a high heat to sear it, then another 30-40 minutes on a lower heat. Should be slightly blackened on the outside and lovely and pink in the middle.

Slice it up, stick it on a platter for everybody to help themselves, serve with new potatoes, salad and a bottle of rosé.

Couldn't agree more, lamb is my go to meat for the grill. I can't get enough of it.

Appetizer: Smoke Jalapeno poppers. Jalapeno with a lengthwise slit, deseed, insert pepperjack cheese. Smoke until cheese is gooey.

Main: For just a few people- brisket with a light rub, or ribs with a little more. I prefer Carolina style rub, but Memphis is good, too. Just a slight variation anyway.
If we are having a party, the guests get cajun rubbed smoked chicken and Boston Butt with Carolina rub.
Sides are collard greens with smoked bacon, grilled Corn on the Cob, and baked beans.

Favorite BBQ Sauce: Store purchased, I like Sweet Baby Ray's. Good stuff. I do make a sweet citrus sauce for chicken. Not my cup of tea normally I prefer spicy over sweet, but on chicken in the summer time it kicks butt and gets rave reviews. I will see if I can find the recipe.

Dessert: Strawberry shortcake or key lime pie.

Beer: Homebrew is best ;) Summer time I have a couple popular recipes. I gotta get them fermenting soon!

These are still all grilling. This is BBQ, served with NC BBQ sauce. Vinegar, red and black pepper, and salt.

Well actually we were out in Langley, and it was called Ozark's Famous BBQ. We had 2 massive smokers imported here from down south, and they sure did a good job. After closing, one smoker was sent to a meat company in Seattle, and they tossed the other one on a trailer so they can continue to do some things around here. Ozark's still operates catered events, and does some bulk items. That is something I would love do as well! Triple D is one of my favorite shows.

Another must is candied bacon! It can be breakfast, appy, dinner, dessert. It's best done in a smoker if you have one, or can easily be done in an oven. Coat bacon in brown sugar, and cook. Super simple, and always turns out great.

my wife has an amazing corn recipe....I'll have to try and coax it out of her. It's basically melted butter mixed with other stuff (I think there is worcestershire and brown sugar in it), but she keeps the corn swimming in it while it grills.

Sounds excellent! I just do a light brushing of melted butter and some spices (salt, peppers, paprika, garlic, etc) works well enough!
