No X/C expert here but tire selection is very dependent on the course and conditions. Ideally, you would want several sets to let you select a tire based on particular conditions. otherwise maybe some of the dirt fans can steer you to a good all-around tire.

Kenda Nuevagals are pretty good all around tires...even if I can't spell them correctly

The Maxxis CrossMarks are my choice for a pretty wide range of terrain. I know a lot of guys that ride those tires on everything. If I was looking for a good, general purpose tire for a XC bike, that'd be my first choice. There is always going to be a "best" tire for a given condition, but I've been incredibly impressed with the versatility of the CrossMarks.

Well, I'll join in with everyone else and say that it's course and weather dependent. However, you can't very well go to the race and have 10 tire sets ready to go can you? And especially if you run tubeless like I do (takes work to seal them up).

I have multiple wheelsets. I have 3 high quality wheelsets and a couple of heavy low-cost training sets. If my son is racing he's going to get one of my wheelsets, leaving me with 2 to choose from.

What I've found is that I most like my Kenda Smallblock 8's. They are perhaps the best rolling tread designs going, and the tires are very light. When the ground is dry and not loose sand these tires have all the grip you will ever need.

If traction is more limited (we have clay here in TN, so wet is like being on moist poop), I will go with my Kenda Karmas. These are not typically considered a wet-weather tire, but I haven't found anything that works well in this kind of mud, so these work as poorly as everything else (best way to put it). You just have to get used to the power sliding and ride it. I have some deep knobby stuff, but that's no better in mud and doesn't roll well at all.

I'm sure the other tires mentioned are great too.
