This usually has to be done at the server level, not the client level. I'm not familar with Entourage, though.
If you are able to do it, make sure you aren't on any listservs or other bulk e-mail senders. Often out of the office auto-responders will reply to these messages, with the reply propagated out to the entire list. When this happens, people you don't even know find out you're out of the office and wonder why you're telling them!
