Bell Peppers! What's your favorite thing to do with them? Can't Post

My wife told me my secret ingredient for this weekend is: Bell Peppers! Here's my thoughts (from my blog):




Susan got me 3 peppers, an orange, a red, and a yellow bell pepper. The possibilities are endless, but already, I've got some ideas.

I have always loved roasted bell peppers, so I'm thinking of roasting the red pepper, then putting it into the food processor with some garlic and olive oil, and making a sort of roasted pepper coulis. I bet that would go great over some sauteed chicken thighs. I could even put the coulis in the pan I cooked the chicken in, and make a nice pan sauce. But what to do with the other peppers? I'm betting those would be awesome cooked down with some onion in olive oil and oregano, until they were nicely caramelized, then served over pasta with ricotta and parmesan cheese. Or, I could serve that over polenta. There's also this recipe in Lynn Rosetta Kasper's "The Italian Country Table" that has this great recipe that I've always wanted to try involving braised peppers with pork and polenta.

Or, maybe I could caramelize the peppers and onions, then pile them on top of the ricotta cheese in a tart shell, and make a pepper tart.

Dang, this is gonna be harder than I thought...

More tomorrow after I cook something.

roast the peppers, peel them, process with carmelized onion and sauteed jalapeno (depends on how hot you want it). Add light mayo (the only time I ever use it...I swear!) and a drizzle of olive oil. Salt and pepper to taste.

cut some small red or other potatoes into small wedges, roast. dip into aioli.

Quick 'n easy.

Chopped Bell Peppers
Coarsely chopped Onions
meat (or veg protein) of choice
rice
"Soy Vey" brand wasabiyaki sauce
Wok

Saute onions, peppers, meat, sauce in wok, add steamed rice, more sauce.

seriously, with the multi colour I would do as little as possible - raw is best - they all have different flavours that are worth experimenting with on their own. Once you start grilling/pureeing/sauteing, you start homogenizing the flavours to the point that the uniqueness of each colour is lost.

Keep it simple and clean.

I don't have anything offhand to help you with at the mo' - just the guiding principle.

Bell peppers? I eat red ones raw like they were apples. They're fucking delicious. I'm completely serious, too. There is no pink font intentions in this post.

well, i just wanna say that i'm not an esteemed anything but i do love me some stuffed bell peppers, more specifically as in let's say at a Mexican restaurant. not sure of what other ethnicities have a food like that.

that and goat cheese pizza, good eatins all around!

Agree, I love just chopping them up and eating as is or adding them to salads. Usually the only way I'll cook them is to cut them into quarters and put them on the grill.
